Tonight we went with leftovers! Well, for me it was but not for Chris. He had missed out on Chicken Alfredo last night. I steamed some mixed veggies and made cheesy garlic toast on the side.

I have to make this cheesy garlic toast again…Yummy!

A Simple dinner to end a great Monday.

I passed on dessert, I didn’t do my workout at all… bad Nicci. That’s okay b/c tomorrow is September 1st and I’m ready for Fall.
My BFF Kari came to visit me today, I love this girl! We have been friends forever and were always there for each other! Here’s some pics of us being goofy…as usual or either just completely bored!

Boy! was I excited on my sick day to look out the apartment window and see the UPS man was here to visit me! The nice people over at Oregon Chai Tea sent me samples to try, Thanks Cedar!
I couldn’t wait to tear open my box and see what was inside! I was sent their Organic Original flavor in concentrate and powder form.

I liked how I could smell the spices instantly; it reminded me of Christmas!

I decided I’d try out the ”On the Go” packets, that are in powder form. All you have to do is add hot water or cold (add milk for a creamier taste ) mix and drink! Mine didn’t blend well at first but I think it was due to the cold water I added straight from the frig; I think tomorrow I’ll try cold tap instead. Since the mixing did not go as planned; I poured the drink into the blender and added 1/3 cup of soy milk.

The Chai tea came out nice and tasty, I prefer a cold beverage but I will be trying this drink hot tomorrow morning.

Overall, the Chai Tea was good, I didn’t care for the 25g of sugar but it didn’t taste like it contained that much & one ingredient I could not pronounce.
My taste buds enjoyed this drink!!

I finally bought more of the Wasa crispbread, I love how this cracker is so crunchy! Two crispbreads with some spread really does fill you up! Check out their website, I just found some Nifty ideas for breakfast, lunch and dinner for later this week.

Yummy, I topped my Wasa with canned Alaskan Salmon spread and tomatoes. I combined 1 can of salmon, 1/4 cup of mild salsa, 1/4 cup plain Horizon yogurt. Who needs mayo? The salmon has enough flavor in it already.

The spread came out tasty along with fruits and veggies on the side.

Can’t forget my Sweet Tea, this Texas Gal loves her tea!

I don’t know about you, but I see a wasa crispbread in my future for snacking later today!

August Rushed by….what happened?
I don’t like to miss work, but I doubt co-workers want to listen to me sniffle and blow my nose every 5 seconds. So, I’m using my sick time (haven’t used since I started my job) and staying home. Honestly I know they say you can’t catch a cold but dang, my boss had one last week!
I know I shouldn’t be drinking milk with a cold but I needed some cold cereal this morning.

- 1 cup of Kashi H2H
- 1 cup of Cascadian Farms Honey Nut O’s
- 1/4 cup of Peace granola
- handful of blueberries
- 1 cup of soy milk
I’m off to buy more Kleenex at the store then come back and do a workout.
