Veggies, It’s What’s for Dinner

by Nicci on 09/25/2009

Last night I had a craving for brownies.  I wanted to bake some brownies and just eat the whole little pan. BUT  instead I ate veggies for dinner.

I think it’s b/c I watched that SATC episode where Miranda bakes a chocolate cake and almost eats the whole thing. Sorry, but it looked so good :)

Okra Fries & a Sweet Potato was on the menu

So Simple and Delicious :)

Jillian kicked my butt last night and I know I will have one sore bum and knees for a couple days.

Nicci, thanks so much for linking! Your okra fries look incredible. I need to try those ASAP!

30 Day Shred kicks my butt every single time. It’s never easy… probably why it’s not my favorite. HAHA! :) Good for you for doing it though, it is a great workout for sure.

Also, food has a crazy effect on my desire to eat. I always want to eat when I watch a cooking show or Biggest Loser.

Roasted veggies are amazing. I NEVER have okra though… Need to change that!!

Stephanie September 26, 2009 at 9:15 am

I really need to try okra! How’d you make these, just bake them in the oven for a bit??

Jessica @ How Sweet September 26, 2009 at 5:08 am

I’ve never had okra and I really want to try!!! :)

Emily September 25, 2009 at 9:27 pm

Ok, so I’ve never made okra before! How do you fix it? I always see it at the farmers’ market, but I don’t know what to do with it!

Annamarina (Running Tails) September 25, 2009 at 7:37 pm

Wow, way to go having veggies instead of brownies! That would have been a tough one for me :) I probably would have had the veggies and the brownies!

Kasondra September 25, 2009 at 7:26 pm

HAHA I just watched that episode, too! Love it when she goes back to the trash can… I think you might need a little bit of chocolate :-)

I have seen a few people on the blogs eating Okra fries, but I don’t really understand how you make them … do you have a recipe you could share?

DaMora September 25, 2009 at 9:49 am

Okra fries? Never heard of such, even with my Southern connections. But you already know I’ve heard of fried okra. Don’t like it, but it always seemed to be around at Granny’s when I was younger.

The sweet potatoes on the other hand, LOVE!

Way to go not giving into the browning temptation.

Mari September 25, 2009 at 9:39 am

Hey! Ha I know what episode you are talking about…when she has to throw it in the trash and then covers it in soap lol. I am a huge SATC Fan

I did 30 minutes of Jillian’s No More Trouble Zone this morning =)

Jess (Fit Chick in the City) September 25, 2009 at 9:35 am

That dinner reminds me of my southern roots!
