Flying Solo with Couscous

by Nicci on 11/14/2009

Chris is at work until this evening, so I’m flying solo today.  Sometimes it gets boring having weekends off while everyone is working. BUT I wouldn’t trade my weekends off for anything.

I tackled 3 miles this morning, in just under 40 minutes…Yay me!!  The miles were slow and I was feeling lazy but  I got it done.  I cooled down with an Upper/Lower body workout from Crunch. I love Netflix instant downloads to the Xbox!

Sore Legs…

Breakfast before 3 miles:

Grapes and Wasa crackers spread with strawberry cream cheese.

I attempted to clean around the apartment, but it’s not going well.  I think I may put it off till Sunday and focus on folding the clothes sitting in the guest room.

I found a box of Trader Joes Couscous in the pantry.  I completely forgot about the quick and easiness of preparing the couscous. I picked this up on our AZ trip earlier this year, I would love a Trader Joes down here in TX! :)

Grilled chicken and steamed veggies over couscous.

Perfect Saturday lunch

Chris and I are going to Buffalo Wild Wings to celebrate a friends birthday tonight, so I may not post later. I will try and take some pics when were out.

Have a lovely Saturday!

Do you push yourself during the week or weekends with your fitness?

mmm wasa crackers are so good and hold up so well to anything spread on them, like your delicious sounding strawberry cream cheese!

I always tend to push myself more during the week and ALWAYS take a rest day on either sat or sunday…and the day that I do work out on the weekends, its certaintly not as hard as I would be working during the week!

nice job on the run, girl that awesome time!

I think we should start a petition to have a Trader Joe’s in Texas. I want to DIEEEEE from jealousy when other post about their Trader Joe goods. BTW are you running outside or on a treadmill?

Nicci November 15, 2009 at 1:30 pm

Diana, I’m currently running outside training for a 5k! We really should start a petition for Trader Joes in Texas!

Hi! I came across your blog through VegWeb and saw that we live in the same town. Very cool! Stick with the Kombucha, it gets better once you get used to it- also some flavors are way better than others. Also, if you haven’t ever been to Drug Emporium on University, you should. They have a huge natural foods section at about half the price of the Cupboard. Though the Cupboard is definitely way cuter and I still go there all the time for breakfast tacos!

I don’t push myself at all at the moment – I have been slacking like CRAZY with fitness, and have to get my butt in gear like NOW!!! I have a beach vacation in a month — eeek!!!

Wasa and strawberry cc sounds good. I picked up some TJ couscous when I was home last. It is so easy to make.

Jason works on the weekends too. Sometimes it’s hard, but other times I like being alone.

Great job on the run!

I love Wasa crackers. Perfectly crunchy! :)

Kaytee November 14, 2009 at 3:12 pm

How do you like the Wasa crackers? I almost bought some today, but couldn’t convince myself I’d like them.

And you? You’re having trouble cleaning? I can hardly believe it. You are the queen of clean!
