A Frozen Delight

I thought I’d be up for cooking tonight but I changed my mind,while driving home from work. I’m still sick with a cold and sore throat.  Instead I went to the local Natural foods store for Almond Breeze Vanilla, but they were out…how dare thee!  I settled for Rice Dream’s Vanilla, Butternut Squash Soup, and two frozen meals.

Yes, frozen dinner Enchilada style

”Cedar Lane” Garden Vegetable Enchilada-Gluten Free

Yum Yum Yum.

I haven’t had a frozen dinner in a long time, but this one was pretty good; Chris enjoyed it too.  We ate some zucchini tossed in olive oil and salt & pepper on the side.

Delicious 25 minute meal.

Is that meal spicy?? The enchilladas made in new mexico make your mouth on fire!!

April- this meal wasn’t spicy at all, but I added some hot sauce on top for kick.

mmm I love Cedarlane’s frozen foods. Their eggplant parmesan is sooo good!

Glad to hear you liked the frozen meal. I’m not a fan of them either, but I like to have some in the freezer at home and work for emergency situations. lol :)

Visiting fam this weekend. Having our cabinets in our kitchen painted white while we’re gone! So excited! :)

I hope you feel better! Get lots of rest this weekend (I’m super jealous of your three day weekend!!). I’ve never tried that Amy’s meal- it looks really delicious. Putting it on the list :)

oh no, I love almond milk and how dare they run out in a time of need.

I love to pair that with my coffee. half A.M and half coffee in my mug. Now the only thing that I would need to make me not miss starbucks, is to buy those sugar-free syrups. Especially the SF pumpkin Pie flavor.

Yes, I am, I have a 3 Day weekend too and both my hubby & daughter are going to be home as well with me……..so I see lots of family time in my future! =)

Oh looks awesome! I havent had a frozen meal in awhile but good to know they are some decent ones out there. Enchiladas are always a hit!! Cool! I really hope you feel better too! I just found your blog actually and its awesome! Im really enjoying it. Have a wonderful weekend!

Oh bummer…feel better soon! I love that TV dinner though…whenever I need something quick those enchiladas are great! Plus they also make it in a gluten-free version! Nice, huh?

i’ve got lazy nights too where I don’t feel like cooking at all. Veggie burgers are life savers in my house!

My weekend will consist of driving up to Dallas, helping my friend move, and hopefully be able to hang out and look around. I’ve only been to Dallas once and I don’t remember much of it.

This is one of my fave frozen meals too – really good with sour cream or plain yogurt on top!

I’m still sick also! GRR. I’m fine all day then I get stuffy at night. It’s not bad but just annoying. BTW frozen foods now a days are not bad at all! I usually eat the amy’s ones!

I have a funeral on Saturday (it’s okay, she was 101 :-)

I also have a friends B-day Saturday night, and then I am going to spend time with my nephew on Sunday!
