Mondays Meatless Wonder

This is a new year and I plan to stick to ”Meal Planning” on a weekly basis.  Also, trying a new recipe weekly is another goal for the year and this recipe did not disappoint.  I’m a big fan of my Grandmother’s Meatloaf and this was on her level of goodness.

Vegetarian Loaf

Ingredients

  1. 1 onion, diced
  2. 3 tbsp canola oil
  3. 1 cup cooked rice
  4. 1 cup peas
  5. 1/4 cup oatmeal, uncooked
  6. 1 cup bread crumbs
  7. 3 tbsp ketchup
  8. 3 tbsp bbq sauce
  9. 1 tbsp garlic salt
  10. 1/2 tsp pepper
  11. 1/4 cup ketchup
  12. 1/4 cup brown sugar

Preheat oven to 375 degrees

Sautee the onion and peas in canola oil for a few minutes.  In a large bowl, combine all the ingredients together.  Press into a lightly greased loaf pan. Cover with foil and bake for 30 minutes.

(This recipe called for ”veggie grounds, but I felt rice would make it more filling)

Fitness: Yoga

I enjoyed yoga class tonight and how Becky, the Instructor is hands on and will assist you with poses.

Thanks everyone who suggested stores to purchase Yoga pants. I finally found 2 pairs at TJ Maxx, after trying on 12 ”not so flattering” pairs.  Extremely comfy pants and I think I’ll  buy another pair to lounge for lounging around at home.

Hello Mates, It’s Monday

I think today was the best Monday, in a very long time.  I went with the flow of my ”Things to Do”  list at work and accomplished everything.  Feels great when you stick to a plan!  To my surprise the board meeting only lasted an hour, which was great considering I was getting sleepy at the end.

I passed on the doughnuts this morning and went with a banana nut muffin.

POM also sent me some samples of their coffee to try, which was great with my muffin.

Lunch was some veggie spaghetti and apple slices. While I played on the Internet and fixed my Facebook account.  I hate when they change the layouts…it’s annoying.

We went with Jason’s Deli for our board meeting and I tried the Spinach Wrap.  Nothing special considering they smooshed my wraps.

It appeared to look like one tiny wrap but was two…couldn’t tell from the smooshing. BOO!

I would workout, but my body’s still in pain from Saturday’s Boot Camp.  Chris thinks it’s funny to chase me around and tickle me.  Nope, I can’t even run from him…more like ‘‘Zombie Walking’‘,  I’m that slow. lol

I have a weakness for Shiner Beer, the ”best dark beer” in Texas.  I’d like to take a trip to Shiner, Tx to visit the brewery sometime next year.

  2. Use a list to stay organized day by day…if possible
  3. Screen calls if you can
  4. Any new items on your list go to bottom (unless urgent)
  5. Take your time and breathe
