<p><span style="color: #ff00ff;">November Goals:</span></p>
<ol>
<li>Drink more water</li>
<li>Workout morning and evening</li>
<li>Less processed foods</li>
<li>Spend more time with family</li>
</ol>
<p>Many challenges are going on and it&#8217;s a great time to pick one to help you get through the Holidays.  I&#8217;m participating in <a href="http://www.healthytippingpoint.com/2009/10/pile-on-the-miles-2009.html">POTM</a> and also another challenge at TheNest that <a href="http://www.kelseytoney.com/">Kelsey</a> from <a href="http://www.kelseytoney.com/2009/11/rocktober-results-and-a-new-challenge/">Kelseytoney </a>has told me about. This challenge will be great with POTM.  Please go check it out, thanks again Kelsey!</p>
<p>I felt so refreshed this morning, I couldn&#8217;t believe how an extra hour can make a difference.  Thank you Mr. Daylight Savings&#8230;for the extra time to workout, eat breakfast at home and watch The Morning Show.</p>
<p>I&#8217;m happy to say I started the day with a workout and ended it with a workout too!</p>
<ul>
<li><strong>30 min. Cardio (morning)</strong></li>
<li><strong>30 min. High Def Sculpt (evening)</strong></li>
<li><strong>30 min. Total Body Sculpt (evening)</strong></li>
</ul>
<p><strong>Yogurt</strong>, <strong>granola</strong> with <strong>fruit </strong>always makes me happy.</p>

<p>Lunch was a <strong>Chipotle burrito </strong>with Carlos.</p>
<p><strong>Tofu Stir Fry</strong> &amp; <strong>Whole Grain Pilaf</strong> was on the menu for dinner tonight.</p>

<p><em><strong><span style="color: #993366;">Cut the tofu into cubes and marinate in stir fry sauce for 15 minutes over the stove.  After cooking the frozen vegetables, I added the tofu and 90 sec Kashi Pilaf to the mix. </span></strong><br />
</em></p>
<p>This delicious meal took less then 30 minutes to prepare.  We now call tofu &#8221;chicken&#8221; at home. Chris likes tofu but would rather I call it chicken, so he can imagine it&#8217;s meat. Lol</p>

<p>A strange thing occurred tonight! <strong><span style="color: #800080;">A boy named Chris liked the Tofu and did not miss chicken</span>! </strong></p>
<p>I&#8217;m still in shock right now! <img src='http://niccisniftyeats.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<ul>
<li>Block of Firm Tofu</li>
<li>Italian bread crumbs and some of my own spices</li>
<li>1 egg white ( so much for vegan Thursdays)  sorry</li>
</ul>
<p>I cut the tofu into thick strips and dipped it in one egg white followed by the crumbs.  Baked at 400 for 30 minutes!</p>
<p><span style="color: #ff00ff;">Yummy all together</span></p>
<p>Now time to sip on my Starbucks Passion Tea  I bought earlier on the way home!</p>
