No Bake Granola Bars

I’m good at making those ”no bake” treats. 

Inspired by the granola bars Bobbi made earlier this week, I decided to make my own version.

This made my Friday!

I ate half for breakfast and the other half at lunch time.

Grabbed a handful of YUMMY ingredients.

  • 1 cup Galaxy Granola Orange Cranberry
  • 1/2 cup maple syrup
  • 1/2 peanut butter
  • 1/4 cup sliced almonds
  • 1/4 semi sweet chocolate chips

Mix all ingredients into the food processor, poor and flatten into pan, place in fridge for 30-45 minutes.

Bounce Back Friday

Bouncing back from a moody, bad and stressful work week; I’m happy that this week is ending on a good note.

Breakfast: 

Fabulous fruit breakfast at my desk.

I reintroduced this melon back into my life after a 10+ year hiatus. I was burned out on watermelon after eating it everyday one summer and gave it up, but not the honeydew or cantaloupe.

strawberries, more melon and Pom Tea.

Vegan Tofu Scramble

I can’t believe I opened the fridge this morning and had no eggs. Eeeck!  I love eating scrambled eggs every Sunday morning, but I guess I will survive. 

This called for trying a tofu scramble…one last  time.  The last time I made a tofu scramble it turned out really bad…what a huge waste of tofu, that I just tossed out. That’s what happens when you get lazy and don’t drain all the water out.

Surprise! Suprise! It turned out right this morning…extremely DELICIOUS.

 

 Directions

  • 1/2  package of extra firm or firm tofu
  • 1/4 bell pepper (diced)
  • 1/4 onion (diced)
  • 2 tablespoons nutritional yeast
  • oregano
  • parsley
  • cumin
  • salt & pepper

*I adjusted the amount of onions, peppers and tofu to make a serving for one.

  • Saute onions and peppers first, then add your crumbled tofu + spices. You can use any spices to your liking.

Ps. I’m excited about our first ”Sons of Pitches” softball team practice & meeting today.  I’ve yet to buy a glove, so I may need to look into that asap.

Good Morning March

Happy March

I tweeted for a couple days about my Birthday gift from my lovely boyfriend….a new cell phone.  I couldn’t decided what phone to get, but everyone said ”You must get the Iphone, you’ll love it”…and so I did.  Have I become addicted to this device…just a tiny bit. I hope this will pass in a couple days as I’m realizing not every app can be added. I am happy to say my addiction only cost me $10, in apps/ring tones. It’s better than the Itouch that I was gifted last year too. I gave the Itouch to my lil brother, since I see no reason to have both.

I’m sitting at my desk sipping on Hot Pomegranate Pizzazz Tea and playing on the Iphone.

 

February Fitness:

My 28 days of fitness went well; I had been sneaking fitness in on lunch breaks at work. My gym is across the street which allows me 30 minutes to get on the tread and run. Working out pays off…I’ve lost 5 pounds and notice my jeans are looser.

Goal Accomplished!

Sad to say our laptop finally died the other day, right before I posted a new blog. My plan was to buy a new laptop next week, but I guess this week it will be shopping time! You can expect to see more posts early in the morning from work. Lol

I prefer Dell but Chris likes HP, any suggestions on a laptop brand? What do you have?
