Fish Sticks The Clean Eating Way

Do you ever eat fish sticks as a kid?  I remember eating them a couple times, but only at a restaurant.

Well tonight, Chris and I ate a cleaner, healthier recipe. I had tilapia filets sitting in the freezer and I wasn’t feeling grilled or broiled tilapia tonight…kind of boring.

Food:

Fish Sticks

Recipe:

  • 3 Tilapia filets (serves 2)
  • 3 slices of whole wheat bread
  • 1 egg
  • seasoning of choice

Directions: Use a food processor to make your slices of bread into crumbs. Mix egg and bread crumbs, in a bowl. Chop tilapia until it is fine, then dip in bread mixture. Shape fish sticks into rectangular shape, add sticks to lightly oiled skillet. Brown  on each side for 4 minutes until golden brown.

Fitness: Monday’s Fit Camp was brutal but I did burn 700 calories.

Complete each set 2-3 times

  • Jump rope x 30, squat press x 8
  • Tire pull, froggers x 8
  • Push ups X 10, hose X 20
  • Burpees x 8,  shoulder press 7-6-5-4-3-2-1 front, side, back
  • Arc Trainer, 40 resistance for 60 sec. staying above 130 in between each workout set.

Great workout and dinner to end Monday!

Please Pass the Wild Rice

I’m in the second week of fit camp (aka Booty camp) and things are going great!  Tonight night we had the pleasure of pulling tires…not my idea of fun but I pushed through and pulled that tire pretty fast down the parking lot.  Followed by running hills which left my legs feeling like Jell-O.

The thought of working out today was far from my mind, but I knew I wouldn’t regret sweating after it ended.

I’m loving that I’m staying motivated and working out with 4 other coworkers.

Workout buddies are great for motivating you to push yourself.

Tonight’s dinner:

My current love for wild rice!

Rice and Shrimp Dinner

Wild Rice, grilled shrimp with sautéed okra and bell peppers.

Happy to eat a clean meal and go to bed…after some Law & Order: SVU re-runs. Smile

Finally… a nifty meal that’s perfect for the chilly weather.

Ingredients:

  • Four skinless chicken breasts
  • 1 can fat free cream of mushroom soup
  • 1/2 bell pepper chopped
  • 2-3 cups brown rice
  • seasonings (salt, pepper, garlic, oregano, curry powder) – I usually don’t measure, I dump!! Winking smile 

Directions:

Place thawed chicken in crockpot, pour cream of mushroom soup on top, add seasonings of choice, cook on low for 4-6 hours. Last but not least add your cooked brown rice to the mixture.

Ready to serve!

In the midst of packing & moving, I was able to go out  and enjoy a nice dinner with friends.

Jeremy, one of my best guy friends, and another friend named Steve, made reservations at Go Fish Ocean Club in Addison, Texas.

I’m pretty sure this restaurant is popular for the delicious food, but also for the Executive Chef, Tiffany Derry

Tiffany Derry is currently one of the final five, on  ”Top Chef’ D.C. ”

 House Salad: mixed greens, candied spicy walnuts, apples, cherry tomatoes and honey whole grain mustard dressing. 

Hawaiian Tuna: Sesame seed crusted/Spring risotto/Lemongrass

Chocolate Croissant Bread Pudding:Dark & White chocolate chunks, cherries, almonds, and crème anglaise

Every course was amazing, and I look forward to visiting this restaurant again!!

(Note to self: remember to charge camera battery the night before)
