I watched the Brady Bunch movie last night before going out to my friends place.
I made a quick plate of okra fries, carrots & a salmon burger patty.
The okra fries were tossed in olive oil, S&P and heated at 400 for 25 minutes.
I saw that Meghann, Pam were making these delicious fries, so I had to try them. I love fried Okra so I knew these fries had to be good. Now I have a new healthier way to eat okra!!
Friends get together was fun…I had 4 drinks, 3 too many and 3Am french toast. Obviously nobody could drive so my friends fiance made french toast for the girls and eggs for the guys.
Early morning eating was not on the agenda, but we all know how that goes with drinking.
So moving on to lunch today….
Yummy Okra fries & over cooked Turkey dogs…still it was good
downed with Honest Tea, very refreshing
This Moroccan Mint Tea tasted great, I’ll have to pick up more on my next trip to Sprouts!
OMG! So much for SUNSHINE, rain just poured down out of nowhere! It was just sunny when I wen to check the mail 30 minutes ago.
Wait…it stopped!! 5 minute rain is so funny to me.

I was so ready to go home & start cooking right after work so I could sit back and relax. I was thinking all day what I could cook and dip into my yummy spinach hummus!
Spicy Salmon patty on a bed of greens
- 1 can of Alaskan Salmon
- 1 cup of Italian bread crumbs
- 1 egg
- 1/2 cup of salsa (hot)
- 1 Tablespoon hot sauce
- 1 Tablespoon taco seasoning
- 1 Tablespoon Greek Yogurt (or mayo)
Spinach Hummus makes the best dressing
Roasted potatoes tossed in olive oil, oregano, basil and rosemary.
Cooked at 450 for 35 minutes
And raw carrots…YUMMY!
Dinner was simply delightful but Chris was not too keen on green hummus so he skipped out & went w/ making salmon burgers. One day I think he’ll want to try my tasty hummus!
Now, I’m flipping through ”Next Top Model” and Rangers game!
Chris went to watch TV in the other room, my channel flipping is too much for him. He did confuse me by watching Rangers game and flipping to Boston game earlier.

I started my morning off sleeping in and on purpose. This girl didn’t get to bed till after 1am. I woke up and had a large banana and did a workout. I was pumped up for 45 minutes of The Firm:Total Body Crunch & got to moving my booty.
By the time I finished that workout, I realized it was time to eat lunch. I was very excited about this Sunday lunch. I fixed a salad of greens topped with a salmon patty!
- Mixed greens
- salmon patty
- tomatoes
- corn
- feta
- low-fat plain Organic Horizon yogurt
And a cup of fruit on the side

Now try saying that 10 times really super fast! I’m just in a dorky mood tonight, sorry guys. For some reason after doing laundry with Chris I got a sudden burst of energy, out of nowhere. I went crazy in the produce dept. at our local grocery store and was about to have a ‘‘foodgasm” in the dairy. Finally Oikos is on the shelf again at the grocer I like, b/c it’s usually cheaper there! So, tonight I give you the delicious Salmon burger I made for the boyfriend and myself with corn on the side.
Smile for me baby!

The Green Tea I was surprised tasted so good
I’m logging off now to watch HgTv (slight obsessed with) and read the two new mags I picked up tonight. Alicia Silverstone on the cover; I love that Vegan Girl too. Looking forward to read up on her and check out new exercises in Fitness Mag.
