My co-worker, Carlos, and I decided to eat lunch at Sweet Basil for lunch. This restaurant never disappoints.
We started off with an appetizer
spring rolls PLEASE!!
Followed by soup consisting of mushrooms and chicken in a savory sauce…silly me forgot the name of it too.
I went with the Sweet & Sour Chicken and brown rice. One of my favorite dishes that they offer. I try new dishes, but I always return to this dish.
Every bite was delicious.
I left with a ”food baby” in my stomach. I believe it was due to all the extra chicken they had in the soup today.
~Tonight Chris and I are going to the Rangers game with friends. I’m excited for Baseball Season and our friend Amy is making Lentil Veggie burgers…can’t wait to eat those. I think that’s better than eating $1 hot dogs

Ooops, I’m on a pasta kick. Two nights in a row, but in moderation/portion control.
I’ve always loved the deep purple color of the eggplant.
Breaded Eggplant w/ Spaghetti
- 1 eggplant
- 3/4 c. fine Italian bread crumbs
- 4 tbsp. olive oil
- 1 egg
- 1/4 c. freshly grated Parmesan cheese
- cilantro
- Basil and garlic salt to taste
- Salt and pepper to taste
Cut eggplant in 1/2 inch thick slices; set aside in pan. Line pan with fresh cilantro. Combine bread crumbs and spices. Dip eggplant in egg, then in bread crumbs. Remove excess and pat slices firmly so they are evenly coated. Layer Parmesan cheese on top of eggplant. Bake at 350 @45 minutes. (If you like you can add marinara sauce & more cheese).

- Fire roasted sweet red pepper sauce (I think we all know how to make spaghetti)
This sauce was really sweet too, loved it.
Feasting on eggplant with spaghetti and corn.
I loved every bite of this meal.

What a sweet dinner it was tonight & the easiest to prepare. Frozen stir fry that came with rice (wish it was brown) and frozen pineapple thrown into the mix.
Took 10 minutes to fix too!
Can’t forget the breaded Italian Tofu
A strange thing occurred tonight! A boy named Chris liked the Tofu and did not miss chicken!
I’m still in shock right now!
- Block of Firm Tofu
- Italian bread crumbs and some of my own spices
- 1 egg white ( so much for vegan Thursdays) sorry
I cut the tofu into thick strips and dipped it in one egg white followed by the crumbs. Baked at 400 for 30 minutes!
Yummy all together
Now time to sip on my Starbucks Passion Tea I bought earlier on the way home!

I finally bought more of the Wasa crispbread, I love how this cracker is so crunchy! Two crispbreads with some spread really does fill you up! Check out their website, I just found some Nifty ideas for breakfast, lunch and dinner for later this week.

Yummy, I topped my Wasa with canned Alaskan Salmon spread and tomatoes. I combined 1 can of salmon, 1/4 cup of mild salsa, 1/4 cup plain Horizon yogurt. Who needs mayo? The salmon has enough flavor in it already.
The spread came out tasty along with fruits and veggies on the side.
Can’t forget my Sweet Tea, this Texas Gal loves her tea!
I don’t know about you, but I see a wasa crispbread in my future for snacking later today!
