I can’t believe I opened the fridge this morning and had no eggs. Eeeck! I love eating scrambled eggs every Sunday morning, but I guess I will survive.
This called for trying a tofu scramble…one last time. The last time I made a tofu scramble it turned out really bad…what a huge waste of tofu, that I just tossed out. That’s what happens when you get lazy and don’t drain all the water out.
Surprise! Suprise! It turned out right this morning…extremely DELICIOUS.
Directions
- 1/2 package of extra firm or firm tofu
- 1/4 bell pepper (diced)
- 1/4 onion (diced)
- 2 tablespoons nutritional yeast
- oregano
- parsley
- cumin
- salt & pepper
*I adjusted the amount of onions, peppers and tofu to make a serving for one.
- Saute onions and peppers first, then add your crumbled tofu + spices. You can use any spices to your liking.

Ps. I’m excited about our first ”Sons of Pitches” softball team practice & meeting today. I’ve yet to buy a glove, so I may need to look into that asap.
Happy Saturday! I’m spending my Saturday cleaning the apartment and catching up on Grey’s. I’m talking seven episodes behind and a dvr pretty full at 85%. Ouch!
I had some marinaded tofu in the fridge and figured it was time to eat; baking spicy & hot BBQ tofu. :) Plus, sweet potato fries that got a lil too crisp.

Kicking November off with a Bang!

I felt so refreshed this morning, I couldn’t believe how an extra hour can make a difference. Thank you Mr. Daylight Savings…for the extra time to workout, eat breakfast at home and watch The Morning Show.
I’m happy to say I started the day with a workout and ended it with a workout too!
- 30 min. Cardio (morning)
- 30 min. High Def Sculpt (evening)
- 30 min. Total Body Sculpt (evening)
Yogurt, granola with fruit always makes me happy.
Lunch was a Chipotle burrito with Carlos.
Tofu Stir Fry & Whole Grain Pilaf was on the menu for dinner tonight.
Cut the tofu into cubes and marinate in stir fry sauce for 15 minutes over the stove. After cooking the frozen vegetables, I added the tofu and 90 sec Kashi Pilaf to the mix.
This delicious meal took less then 30 minutes to prepare. We now call tofu ”chicken” at home. Chris likes tofu but would rather I call it chicken, so he can imagine it’s meat. Lol
Can’t forget the fruit salad on the side as dessert.

I had the BEST Tofu in the world today!!
I went to Pei Wei (first time) with my friend Carlos and fell in love. I like the atmosphere and I was surprised by the scenery inside. I had pictured a typical fast food joint inside, but it was a very nice chain restaurant. The serving of food was so much, that I boxed up half of my meal for Fridays lunch.

I’ll have to try out their other vegetarian options next visit.
Haha, just noticed it looks so similar in color to last night’s meal. lol
Later I snacked on some trail mix, while I filed papers in my office. I hate filing, but I like to be organized.

Cascadian Farm Granola bar, just what I needed something sweet & salty
Now, Chris and I are driving down to Lavonne to visit his parents & go out for dinner. We’re going to a pizza place, so I hope I can eat more than cheese pizza tonight.
Weekend Goal: Drink more water, stick to portion control.
