Vegetarian Yakisoba

 My Grandmother made the best Yakisoba, that she learned to cook while living in Japan, when my grandfather was in the air force. I decided today would be the best day for noodles; I can never get enough of carbs in noodle form.

Vegetarian Yakisoba

Ingredients

  • Carrots, chopped
  • Bell peppers, chopped
  • 1 clove of garlic, chopped
  • 1 tbsp of sesame oil (olive oil will work)
  • Cooked whole wheat spaghetti
  • Morning Star Chick n’ strips (vegetarian)
  • Kikkoman Soy Sauce, about 3 tbsps

Directions

While pasta is cooking, Heat the sesame oil in a pan with the garlic and 1 tbsp of the soy sauce.  Put the  carrots, red and green bell peppers in the pan with the rest of the soy sauce until the veggies start to wilt and soften. Put into a large bowl. Add the cooked pasta, chicken (pre-cooked)  and vegetables. Toss until well blended. (You can add any vegetables that you like; it’s great with cabbage but I was out.)

Vegan Tofu Scramble

I can’t believe I opened the fridge this morning and had no eggs. Eeeck!  I love eating scrambled eggs every Sunday morning, but I guess I will survive. 

This called for trying a tofu scramble…one last  time.  The last time I made a tofu scramble it turned out really bad…what a huge waste of tofu, that I just tossed out. That’s what happens when you get lazy and don’t drain all the water out.

Surprise! Suprise! It turned out right this morning…extremely DELICIOUS.

 

 Directions

  • 1/2  package of extra firm or firm tofu
  • 1/4 bell pepper (diced)
  • 1/4 onion (diced)
  • 2 tablespoons nutritional yeast
  • oregano
  • parsley
  • cumin
  • salt & pepper

*I adjusted the amount of onions, peppers and tofu to make a serving for one.

  • Saute onions and peppers first, then add your crumbled tofu + spices. You can use any spices to your liking.

Ps. I’m excited about our first ”Sons of Pitches” softball team practice & meeting today.  I’ve yet to buy a glove, so I may need to look into that asap.

Happy Tofu Saturday

Happy Saturday! I’m spending my Saturday cleaning the apartment and catching up on Grey’s.  I’m talking seven episodes behind and a dvr pretty full at 85%. Ouch! 

I had some marinaded tofu in the fridge and figured it was time to eat; baking spicy & hot BBQ tofu.  :) Plus, sweet potato fries that got a lil too crisp.

Rainbow slaw paired with the best Watermelon Vinaigrette from my last Central Market trip.

Vegetarian Style BBQ

Spending a Saturday evening eating delicious back yard food with friends is RELAXING.

Trinity and Kristin invited me over for a Vegetarian BBQ and fellowship with friends. Definitely a nice ”recovery” meal from Friday’s board games/karaoke bar crawl I hosted.

I’m never dissapointed when dining at their house. 

My plate included a veggie burger, cabbage slaw, potato salad and fresh squeezed lemonade.

Trinity’s homemade seitan sausage had to be the highlight of the BBQ. I loved every bite of the seitan sausage with spicy mustard.

Delicious.

I’m very happy with my relaxing Saturday night.
