Party With Mr. Egglplant

Ooops, I’m on a pasta kick.  Two nights in a row, but in moderation/portion control.

I’ve always loved the deep purple color of the eggplant.

Breaded Eggplant w/ Spaghetti

  • 1 eggplant
  • 3/4 c. fine Italian bread crumbs
  • 4 tbsp. olive oil
  • 1 egg
  • 1/4 c. freshly grated Parmesan cheese
  • cilantro
  • Basil and garlic salt to taste
  • Salt and pepper to taste

Cut eggplant in 1/2 inch thick slices; set aside in pan.  Line pan with fresh cilantro. Combine bread crumbs and spices. Dip eggplant in egg, then in bread crumbs. Remove excess and pat slices firmly so they are evenly coated. Layer Parmesan cheese on top of eggplant. Bake at 350 @45 minutes. (If you like  you can add marinara sauce & more cheese).

Spaghetti

  • Spaghetti
  • Fire roasted sweet red pepper sauce (I think we all know how to make spaghetti)

This sauce was really sweet too, loved it.

The aubergine/eggplant looks delicious. I adore roasted red pepper sauce, my Mum makes her own and it’s wonderful :)

Ok… I am not the biggest eggplant fan (weird cause I like almost everything) but I would totally eat your eggplant! It looks amazing!

Eggplant is so good! You can make eggplant sandwiches. It’s also in ratatouille (really yummy with polenta!). Congrats on winning the giveaway :)

I bought an eggplant today, and I too need ideas for it :)
Once, I made a delicious meal. I cooked eggplant, actually baked it for 20 min or sth. Then I purred it, and added to it cous cous, garlic, and some spices. I formed balls, and inside every ball, I put a tiny piece of cheese. Then I baked those balls for 15 min in the oven. It was superb!

Loved Glee tonight! I have an awesome eggplant salad…grilled eggplant and vidalia mixed with a red onion and feta and a balsamic dressing. It’s amazing!

Looks great. I meant to make eggplant parm for Ryan before I headed to the States, but I ran out of time. I did have eggplant tonight for dinner though and it was delish!

Cilantro is such an interesting addition to this dish, I love this idea! :)

Meghan over at InnerWorkings just made a deelish sounding eggplant dish tonight — eggplant roll ups with goat cheese/raisins/basil atop a mix of chickpeas, mushrooms and tomatoes — sounded really interesting and yumm! (I still gotta get past my goat cheese phobia before I try however, unless I sub :/)

I just recently discovered egglant, and plan to make some tomorrow, stuffed with some veggies and cheese. I hope it turns out good. Your eggplant looks really good!
