Omega-3 Yummy

Go Rangers!!  Watching baseball with Chris tonight during dinner!

I was so ready to go home & start cooking right after work so I could sit back and relax.  I was thinking all day what I could cook and  dip into my yummy spinach hummus!

Spicy Salmon patty on a bed of greens

  • 1 can of Alaskan Salmon
  • 1 cup of Italian bread crumbs
  • 1 egg
  • 1/2 cup of salsa (hot)
  • 1 Tablespoon hot sauce
  • 1 Tablespoon taco seasoning
  • 1 Tablespoon Greek Yogurt (or mayo)

Spinach Hummus makes the best dressing

Roasted potatoes tossed in olive oil, oregano, basil and rosemary.

Cooked at 450 for 35 minutes

Dinner was simply delightful but Chris was not too keen on green hummus so he skipped out & went w/ making salmon burgers.  One day I think he’ll want to try my tasty hummus!

Now, I’m flipping through ”Next Top Model” and Rangers game!

Chris went to watch TV in the other room, my channel flipping is too much for him.  He did confuse me by watching Rangers game and flipping to Boston game earlier. :)

Tomorrow is my first day of Vegan Challenge, I’m joining Lindsey to eat Vegan for the month.  I’m only doing Thursdays every week. Give me a chance to explore and try new recipes!  Wish me luck

I’m nervous about this challenge. My mind went blank when I looked into my frig. I rely alot on dairy for breakfast. We shall see…

mm looks great! I love simple din dins. The roasted potatoes look especially tasty. Good luck with the Vegan challenge! I’ll be excited to see what you cook up!
