Mushroom Bean Burger

Mushrooms were on sale at Central Market this past weekend and I’ve been craving them like crazy.  I  love a delicious and filling meatless burger on a bed of fresh mixed greens with veggie cheese. 

 

Ingredients: 1 cup mushrooms, 1 cup kidney beans, 1 egg, 1/2 cup bread crumbs, dried oregano & parsley.  Directions: Saute mushrooms in olive oil for 5 minutes, combine all ingredients in food processor then make into patties (4), pan fry until brown on each side.

Any meal that takes less than 30 minutes to prepare is my friend.  This burger with a side of sweet potato fries is perfect for a grill out on a weekend adfternoon!

Just found your blog today, by way of Namaste Mari! I’ve yet to try making my own veggie burgers, and this recipe looks right up my alley- I LOVE mushrooms. Thanks for sharing!

It looks so yum. I am experimenting with veggan eating so it is nice to know how far you can stretch a bean.

Gotta try this! I have a similar one that doesn’t include beans but I know it would be better with them.

Great recipe. I’ve never thought about making my own meatless burger. I normally just buy them frozen. It looks like you ate it on an Arnold Sandwich Thin, I can’t get enough of those babies! :)

I have some mushrooms in my fridge that I was just thinking I needed to do something fun with (other than sautee them and put them in a quesadilla or omelet). This is PERFECT… is it sad that I want to go to bed now so tomorrow will come faster (wait… don’t answer that!)

Umm, those sound amazing and super simple. I’ve made homemade veggie burgers but only with beans. Mushrooms sound like a fantastic addition!
