Hello, I’m back from an unexpected blogging hiatus! Due to my busy work schedule and life…blogging was put on the back burner.
I’ve truly missed blogging and sharing life happenings with y’all!
In October, I had the pleasure of working with local Chevy DFW dealerships; test driving the new 2012 Chevy Traverse for 2 weeks.

I took a trip to the Texas State Fair & met up with 30+ lady bloggers for the event!

I definitely had a fun time test driving this beauty!
Talk about lots of room & space!
My favorite things about the car: the awesome XM radio & Onstar Navigation…I need both in my own car!
I loved that I could listen to 100+ stations of music, talk radio and sports. Plus the OnStar feature came in handy, when I needed to find my way around town and Dallas.

Would you like to test drive the new Traverse and pamper yourself??
”Test drive a Chevy Traverse between October 24th and November 19th receive a $40 SpaFinder gift card!”
Today is a SNOW DAY here in Texas! Meaning my office is closed and hopefully Friday too, in order to have a fabulous 5 day weekend! I only hope that the snow does not ruin any weekend plans.
This weekend Chris and I will be attending the Vagina Monologues. The Vagina Monologues is part of an amazing global movement called V Day. www.vday.org.
It addresses violence against women and children. We went to the play last year and it was humorous but also some monologues were sad.
Extra Bonus: RENT is being performed on stage by our local community college. Chris and I are going with a group of friends on Friday. I love this musical… I’ve got all the songs on my ipod, cd in car and the movie.
I tend to break out the RENT soundtrack when I have parties…all the straight people tend to leave. Wait! maybe that’s why I have few straight friends attending my parties.
What to eat on a snowy day…something warm.
Breakfast:

Baked Oats with Banana
Missy always pops up when she smells something cooking in the kitchen.

Agenda in the snow:
- 30 Day Shred- (I don’t run in the snow, so no 2 miles)
- Post office – mail packages and V-day cards
- Grocery store
- Cleaning
I might as well take advantage of this day off and get things rolling.
Anyone stuck indoors or having to work in the snow? What’s your snow story?

Ooops, I’m on a pasta kick. Two nights in a row, but in moderation/portion control.
I’ve always loved the deep purple color of the eggplant.
Breaded Eggplant w/ Spaghetti

- 1 eggplant
- 3/4 c. fine Italian bread crumbs
- 4 tbsp. olive oil
- 1 egg
- 1/4 c. freshly grated Parmesan cheese
- cilantro
- Basil and garlic salt to taste
- Salt and pepper to taste

Cut eggplant in 1/2 inch thick slices; set aside in pan. Line pan with fresh cilantro. Combine bread crumbs and spices. Dip eggplant in egg, then in bread crumbs. Remove excess and pat slices firmly so they are evenly coated. Layer Parmesan cheese on top of eggplant. Bake at 350 @45 minutes. (If you like you can add marinara sauce & more cheese).
Spaghetti
- Spaghetti
- Fire roasted sweet red pepper sauce (I think we all know how to make spaghetti)
