A Sweeter Dinner Is Better

What a sweet dinner it was tonight & the easiest to prepare.  Frozen stir fry that came with rice (wish it was brown) and frozen pineapple thrown into the mix.

Took 10 minutes to fix too!

Can’t forget the breaded Italian Tofu

A strange thing occurred tonight! A boy named Chris liked the Tofu and did not miss chicken!

I’m still in shock right now! :)

  • Block of Firm Tofu
  • Italian bread crumbs and some of my own spices
  • 1 egg white ( so much for vegan Thursdays)  sorry

I cut the tofu into thick strips and dipped it in one egg white followed by the crumbs.  Baked at 400 for 30 minutes!

Yummy all together

Now time to sip on my Starbucks Passion Tea  I bought earlier on the way home!

AH I need to try pineapple in my stir fry! Sounds amazing.

I love Gliding Calm’s stir-fry… I make it ALL the time. I also really like the curried tofu from Veganomicon (I adapted it and put it on my blog if you don’t have the book). Pretty much anything tofu is good to me :-)

Your tofu stir fry looks delish and so colorful. I really like tofu (actually just plain), but I’ve found that soy makes my stomach upset. :-( I would eat it all the time otherwise!

I love stir fry with pineapple! And that tofu looks great. My fave way to prepare tofu is baked with lemon juice, EVOO, soy sauce, and rosemary.

I love tofu,just baked in the oven with some spices, or stir fry with veggies. I have to try this with pineapple!

LOVE passion fruit iced tea. I even make it at home!
I love tofu/sweet potato burgers! Also, cooked with lentils, tomatoes and some other stuff I can’t remember (oops) as taco filling!
