No Bake Granola Bars

by Nicci on 09/03/2010

I’m good at making those ”no bake” treats.

Inspired by the granola bars Bobbi made earlier this week, I decided to make my own version.

This made my Friday!

031

I ate half for breakfast and the other half at lunch time.

032

Grabbed a handful of YUMMY ingredients.

  • 1 cup Galaxy Granola Orange Cranberry
  • 1/2 cup maple syrup
  • 1/2 peanut butter
  • 1/4 cup sliced almonds
  • 1/4 semi sweet chocolate chips

Mix all ingredients into the food processor, poor and flatten into pan, place in fridge for 30-45 minutes.

Gotta Love Easy Recipes!

Shopping and Boba Tea

by Nicci on 06/19/2010

Awww, first quick post via Iphone! Gotta love the technology!

Today was an adventure trying out softball gloves. I’ve been practicing with Chris’ for the past week, but must give it back… were on the same team.

Kristin and Trinity went shopping with me but I didn’t commit to a glove…so many choices and fits.

I’ll just wait and borrow one for now.

Kristin and Trin introduced me to Boba Tea after shopping!

DELICIOUS!!

What’s Boba Tea??
A sweet preferably fruit tea containing small tapioca balls. Usually made with fruit or milk.

I had a “Mango” cold Boba tea!

Yum! Perfect Saturday Treat.

Anyone ever tried Boba Tea?? What’s your favorite flavor?

Chicago Here I Come

by Nicci on 05/20/2010

Happy to say I will be attending the 2nd annual Healthy Living Summit in August.  I’ve never been to Chicago, so if anyone knows of places to eat and visit, please let me know.

I came home just in time to purchase my ticket Wednesday night after Zumba class and a 2 mile run.

Loving my new Yoga top, purchased for a measly $1.99 @ Old Navy. Woohoo gotta love that store; the tank kept me nice and cool during Zumba.

Freaking out…

I’ve been slacking in the running department lately…shame on me. I’m running this 5k with Kyra from A Foodie Gets Fit on Saturday for ”Run for Retrievers”; can’t wait to meet her in person.  I’m focusing on fun rather than time, but I know I may change my mind at the last minute before the race begins.

Snack Attack.

Last night called for a late night smoothie since my body is craving fruits. Some weeks I go heavy on veggies but slack on fruit; not on purpose.

My smoothie contained:

  • 1 cup strawberries
  • 1 cup blueberries
  • 1 cup almond milk
  • 1 packet Amazing Grass Green Food

 Happy Friday.

Good Habits are Forming

by Nicci on 11/16/2009

Good habits are forming with sticking to a schedule for work and life in general.  I’m going strong with all my work outs and running. I pulled out my trusty crock pot to make dinner in advance last night.  This way I have time for a work out, Old Navy stop and laundry.  I’ve also decided to cook and bake more b/c I have been slacking in those categories.

Breakfast was another Amazing Grass smoothie on the go…
