 My Grandmother made the best Yakisoba, that she learned to cook while living in Japan, when my grandfather was in the air force. I decided today would be the best day for noodles; I can never get enough of carbs in noodle form.

Vegetarian Yakisoba

Ingredients

  • Carrots, chopped
  • Bell peppers, chopped
  • 1 clove of garlic, chopped
  • 1 tbsp of sesame oil (olive oil will work)
  • Cooked whole wheat spaghetti
  • Morning Star Chick n’ strips (vegetarian)
  • Kikkoman Soy Sauce, about 3 tbsps

Directions

While pasta is cooking, Heat the sesame oil in a pan with the garlic and 1 tbsp of the soy sauce.  Put the  carrots, red and green bell peppers in the pan with the rest of the soy sauce until the veggies start to wilt and soften. Put into a large bowl. Add the cooked pasta, chicken (pre-cooked)  and vegetables. Toss until well blended. (You can add any vegetables that you like; it’s great with cabbage but I was out.)

Our friend Eric invited us to ”Spaghetti-Extravaganza Part II” last night. I was supper excited because Eric makes delicious spaghetti, but this time in addition to spaghetti he made a ”Chicken Lasagna”.

Cheesy Chicken Lasagna, garlic bread and salad.

I loved every bite and can not wait to get the recipe and make this later next week. The breading on top, carrots and cheese made this dish taste so good.

Many glasses of wine and a couple rounds of ”Apples to Apples”  with friends; made it a great Wednesday night get together.

I haven’t been to Sweet Basil in months, so I tried the Green Curry Chicken.

The waitress asked how spicy, on a scale of 1-5 and I went with #1…I’m a wimp :)

The Curry was very spicy but also delicious.

A great Foodie Christmas and Blogger Dinner. I’m very happy to have blogger friends in Texas, but also in the same city!

What was the best part of your Holiday?  Did you enjoy time with family and friends?

Thanking every Reader for a great year, especially the past 5 months of blogging at this domain. I’ve met so many lovely people and appreciate all the comments, advice and love you’ve shown me. I can’t wait to see what 2010 brings…I’m ready!

Tomorrow’s plans include eating with my Family and then driving about an hour South to eat with Chris’ family.  We will be eating at his Aunts this year and watching two football games!!  Texas Longhorns Baby!

Office Workout:

  1. 3 set of 12 squats
  2. 30 crunches
  3. 30 reverse crunches
  4. 3 set of 12 reverse lunges

Lunch:  My office was invited to tour a new Senior Living Community and they provided lunch from Palio’s!  I love Palio’s and the pasta, was just as delicious as the pizza.  I loved the Apts we toured…beautiful place, but I’m not 55 for another 20+ years.

Tonight’s Menu:

Annie’s Mac n Cheese (HOLY YUM), homemade turkey burger and corn.
