Mushroom Bean Burger

This is a new year and I plan to stick to ”Meal Planning” on a weekly basis.  Also, trying a new recipe weekly is another goal for the year and this recipe did not disappoint.  I’m a big fan of my Grandmother’s Meatloaf and this was on her level of goodness.

Just three more days of work until I’m off for Thanksgiving!! I enjoyed most of the weekend, though it was draining at times.  I managed to squeeze in cardio and yoga today.  Thanksgiving parties and dessert buffets took over the weekend, but I did not overeat.  Portion control took over but my belly stayed full.

It’s not cold outside but I really wanted soup for lunch. I think it was time to use another can of Pumpkin.
Easy Smashing Pumpkin Soup

one apple
1 can pumpkin
1 cup of Silk (soy milk)
1/3 onion
2 Tsp olive oil

Ooops, I’m on a pasta kick.  Two nights in a row, but in moderation/portion control.
I’ve always loved the deep purple color of the eggplant.
Breaded Eggplant w/ Spaghetti

1 eggplant
3/4 c. fine Italian bread crumbs
4 tbsp. olive oil
1 egg
1/4 c. freshly grated Parmesan cheese
